That will cool off those deer killed in the evening very nicely and allow me to get a good hunt in the morning and then skin and bone out after the morning hunt in the daylight. Everybody wants to skin a deer immediately and get it chilled even faster. Hold on. For maximum tenderness, that's not the best. In those temperatures I probably wouldn't even hang it, just quarter and put in the fridge or a cooler. If it was cooler it depends how old the deer is. Generally you want to hang older deer longer. Usually we don't even hang deer if we can cut it before rigor mortis.

If rigor mortis has already set in and it's not a really old deer, hang it till it loosens up again and then you can cut it just fine. My advise is either cut it up right away or get it in your fridge. Before I had a walk in cooler I always cleared the fridge as much as possible and stuff it in there works great, I always used a sheet and put one layer of deer down fold it over so it separates the game and put the next layer down.

This always the blood to not come out and pool up and soaking the game causes a great layer on the outside and could eventually cause it to rot. If you can't convince the wife of taking up the fridge then goodluck!!
